“Entre olas. Recetas tradicionales de La Gomera, El Hierro y Tenerife” aborda la cultura gastronómica tradicional en las islas de El Hierro, La Gomera y Tenerife, desde su relación con el mar. Un texto que nos habla de territorialidad, identidad, historia y patrimonio, ligado a los diversos procesos que han tenido lugar en las islas. Un contexto atravesado por problemáticas como el turismo, la pesca, la soberanía alimentaria, la economía azul, entre otras. Es, por tanto, un primer paso para aproximarse al universo de las recetas tradicionales, nacidas de estas poblaciones y fomentar el conocimiento de la cultura gastronómica marítima de nuestras islas.

Traditional recipes from La Gomera, El Hierro, and Tenerife" approach the traditional gastronomic culture of the islands of El Hierro, La Gomera, and Tenerife, from their relationship with the sea. A text that speaks of territoriality, identity, history, and heritage, linked to the various processes that have taken place on the islands. A context crossed by issues such as tourism, fishing, food sovereignty, blue economy, among others. It is, therefore, a first step to approach the universe of traditional recipes, born from these populations and to promote the knowledge of the maritime gastronomic culture of our islands.
